India Pale Ale is one of Britain’s classic beer styles, now imitated with great style in the USA. If it is at 5%abv and above, capable of lasting its three month+ voyage to India in the 19th century, it will be a great match with spicier Tandoors and chilli’d kedgeree. But it is also wonderful with mature blue cheese, the salty pungency of Stilton and friends contrasting with the tangy marmalade hops – a union of contrasts.
