Job Function:
As a member of the Stroud Brewery production team, to jointly manage production of finished packaged products ready for sale whilst maintaining a high quality standard.
We are a dedicated organic brewery producing a full range of styles in cask, keg and can. We have a small pilot brewery and package our own products on site. |
Main responsibilities:
Production Management:
- To work to the sales team forecasts and ensure products are available to an agreed schedule
- To maintain and continuously improve quality and production standards.
- To work to HACCP, Soil Association and SALSA standards, maintaining proper records, routine product testing, maintenance schedules and due diligence for HMRC. Responsible for compliance with their food quality standards.
- To maximise stock management and deliveries, and implement improvement to systems to increase efficiency and reduce costs.
- Ensure onsite security is maintained and no unauthorised personnel access the brew hall or cold store unaccompanied.
- To ensure the brewhouse is adequately and efficiently staffed, and holiday time is organised with cover.
- Maintain staff skills by helping to recruit, select, and train employees; develop personal growth opportunities.
- To communicate job expectations and appraise results, initiating, coordinating and enforcing systems, policies, procedures and measurable objectives.
- To take part in staff appraisal meetings for other brew team members, as requested by the Managing Director.
- To take part in monthly planning meetings with the Brew Team and Managing Director.
- To attend departmental & sales meetings.
Systems:
A Senior Brewer must adopt a philosophy of continual improvement. They will constantly look for ways to brew beer more efficiently and increase the quality of the finished product.
Together with their team they will:
- Monitoring and ensuring compliance for all accreditations
- Maintain SALSA accreditation
- Maintain HACCP system
- Maintain BFBi accreditation
- Maintain Organic certification
- Maintain Vegan certification
- Develop and maintain environmental/ethical accreditation – BCorps
- Develop a product development system
- Develop a product specification system
- Develop and monitoring quality management system
- Develop a product withdrawal/recall system
- Develop products as required: gluten free/low gluten, low alcohol etc
Brewing:
- Ordering raw materials
- Brewing – supervising brew days
- Ensuring quality, health and safety measures are maintained and adhered to.
- Cleaning – vessels, casks and the premises
- Maintenance – simple wiring and equipment repairs
- Entering products in to competitions
- Developing new products
- And other tasks as required
Stock Control:
- Responsibility for ordering trade cases, kegs/casks, beer transportation to bottling contractors and associated sundry brewing items.
- Working with brewers to plan brewing and bottling schedules
- Responsibility for stocktake and updating inventory software
H&S:
They must ensure the brewery is a safe place to work and they play a role in enforcing safety standards on the production line. The Lead Brewer will also perform safety audits and ensure that anyone visiting the brewery does so safely. Ensure the brewery is extremely clean and complies with food regulations. The brewery production manager will be very vigilant when it comes to workplace hygiene. They must ensure that all machinery is correctly maintained and sanitised after use, and:
- Maintain a safe working environment
- Enforce occupational health and safety standards
- Represent production on the H&S committee.
- Act as Stroud Brewery Production H&S Officer: Together with MD ensuring compliance.
Other tasks as required:

Specific Experience Required
Knowledge:
- A formal brewing qualification (IBD diploma or equivalent)
- A management qualification or the equivalent experience
- Ideally, they will have a Bachelor’s degree in food production, chemistry, biology, business, engineering or business.
- Knowledge of government regulatory programs and HACCP
- A significant amount of experience managing a brewery production line (5 or more years)
- A demonstrated ability to drive improvement and innovation at a brewery
- Experience in managing a team
- Experience running a production line and implementing quality assurance schemes
- Proven ability to use best practice manufacturing techniques to improve a brewery
- An interest in real ales and their production
Skills:
- Excellent written and verbal communication skills

- Excellent leadership skills, the ability to motivate a team and to maintain positive morale in the workplace
- Strong knowledge of brewing practices and different beers
